Caribbean Sunshine “Chicken Pumpkin Soup”

Ingredients:

  • 1 Sachet Caribbean Sunshine Pumpkin Soup Mix.
  • 2 lbs. Chicken cut up.
  • 1 lb. Pumpkin cut up into one-inch pieces.
  • 1 lb. Yellow Yam cut up into one-inch pieces.
  • 1 Medium Irish Potato cut up into one-inch pieces.
  • ½ lb. Carrots sliced.
  • ½ lb. Chayote cut up into one-inch pieces.
  • ¼ lb. Turnip sliced (optional).
  • One tablespoon Caribbean Sunshine All Purpose Seasoning.
  • Three Quarts Water.
  • 1 Tablespoon Caribbean Sunshine Scotch Bonnet Pepper Sauce (optional).

Preparation:

  • Place cleaned and dry Chicken parts in a bowl.
  • Coat Chicken parts thoroughly with Caribbean Sunshine All Purpose Seasoning and place in a sealed container in refrigerator for at least two hours, overnight if possible.

Cooking Instructions: 

  • Add Chicken, Caribbean Sunshine Pumpkin Soup Mix, and Water to a Large Pot.
  • Boil Chicken on medium high heat for 30 minutes.
  • Add remaining Ingredients and simmer on medium high heat for another 30 minutes or until Chicken and Vegetables are properly cooked.

Add additional Caribbean Sunshine Scotch Bonnet Pepper Sauce to taste.

Serving Suggestions: 

Serve with Jamaican Hard Dough Bread or Festival. Add more Caribbean Sunshine Scotch Bonnet Pepper Sauce for an even more incredible flavor. Enjoy!
